This Eton Mess Fudge recipe is a White Chocolate Strawberry fudge packed full of Meringue and freeze-dried Strawberries.
I love how easy fudge is to make especially this no-bake recipe, and it only has 6 ingredients!!

Reasons To Love This Recipe
No-Bake – This recipe is a no-bake recipe, which means there is no oven involved. All you need to do is to melt the chocolate which you can either do in a microwave or over a ban-marie.

Before you Start Baking
There isn’t too much you need to do before you start baking. Because this is a no-bake recipe you don’t need to preheat the oven or anything.
All you need to do really is to line your tin. I used a 20cm square tin for this fudge.

How To Make Eton Mess Fudge
I decided to make this fudge using white chocolate as I just think it pairs better with Strawberry flavouring but you could use milk or dark chocolate if you prefer.
One of the things I love about making fudge is how easily customisable it is. There are so many different options and different flavours you can try by using the basics from one recipe.
The basics of this recipe is the same as in my Oreo Fudge recipe.

No-Bake White Chocolate & Strawberry Tart
Start by melting the chocolate, I put it in the microwave on 20-second bursts stirring in between each burst until it is completely melted and smooth.
Next, I added in the flavouring and condensed milk and mix until it is completely combined. I used a supermarket own brand of strawberry flavouring.
I normally do this by hand but you could use a mixer. It does become quite thick and gloopy at this point so it might end up sticking to your whisk.
Add in the icing sugar and mix again until completely combined. At this point, it should be really thick and gloopy.
Fold through the meringues and freeze-dried strawberries. I used shop-bought meringues for this recipe as I find they are a lot drier than homemade ones so they tend to hold their shape and not go mushy.
I found the easiest way to do this was to crush them using my hands as I put them into the bowl. That way they are all different sizes, so when you are eating the fudge, you get a lovely big chunk of meringue.
Pour the mixture into your cake tin and smooth it out until it is completely flat.
Once it is completely flat sprinkle over some leftover meringue and freeze-dried strawberries and press these into the top.
Pop it into the fridge until it is completely set.

Alternatives
As I said above you can change the chocolate to milk or dark this recipe will work perfectly with either.
You could also change it up and use freeze-dried raspberries instead.
You could also add in some food colouring maybe pink like with my Pink Gin Fudge or red.

Ingredients
For the Fudge
- 500 g White Chocolate
- 397 g Condensed Milk (1 tin)
- 1-2 tsp Strawberry Flavouring
- 100 g Icing Sugar
- 6 g Freeze-Dried Strawberries
- 6 Meringue Nests (crushed)
To Decorate
- 2 Meringue Nests (crushed)
- 1 g Freeze-Dried Strawberries
Instructions
To Make the Fudge
- Line your 7" square cake tin with baking parchment and leave to one side.
- Add the white chocolate to a large bowl and melt in the microwave on 20 second bursts stirring in between until compleltey melted and smooth OR melt the chocolate in a saucepan over a low/medium heat.
- Once the chocolate has melted add in the flavouring and condensed milk and mix until smooth.
- Add in the icing sugar and mix. The fudge should now be really thick and gloopy.
- Add in the freeze-dried strawberries and crushed meringues and fold these through until they are evenly distributed.
- Pour the mixture into your cake tin and smooth.
- Sprinkle over the freeze-dried strawberries and crushed meringue and press these gently into the top of the fudge.
- Pop it into the fridge to set (this should take around 4 hours)
- Once the fudge has set remove from the fridge and cut into individual portions.
